We had an abundance of ripe bananas in the freezer and a lack of cookies in the cabinet.

  1. Pre heat oven to 350 degrees
  2. Cream together butter and sugar until light and fluffy. Add egg and continue to beat until the mixture is light and fluffy.
  3. In a separate bowl, mix the mashed bananas and baking soda. Let sit for 2 minutes. The baking soda will react with the acid in the bananas which in turn will give the cookies their lift and rise.
  4. Mix the banana mixture into the butter mixture.
  5. Whisk together flour, salt, and spices. Add to the butter and banana mixture and mix until just combined.
  6. Fold in nuts, chips or raisins.
  7. Drop in dollops onto parchment paper-line baking sheet. Bake for 13-15 minutes or until nicely golden brown. Let cool on wire racks. Note: original recipe said 11 to 13 minutes but mine took a full 15. Even with medium-large dollops, the recipe made 36+ cookies. You could also easily fill these with a cream cheese whoopie pie filling and make whoopie pies with them.
